- Recipe: Traditional Napoletana Sauce Using Sneaky's Pomodori
If you’ve been to Sneaky’s Restaurant before, it’s likely that you’re already familiar with our Sneaky’s Pomodori. From our pizza and pasta to our antipasti, our house made sauce is everywhere on the menu, and it’s not hard to see why. This sauce is made in house with 100% locally grown Roma tomatoes, fresh basil, salt, and a whole lot of love from our Sneaky’s staff, friends, and family. It’s a true staple of our kitchen and will hopefully soon become one in yours too! Our house made Sneaky's gnocchi served with fresh Napoletana sauce. Sneaky's has been making and using its own tomato sauce since first opening its doors in 2014. ‘Sauce Day’ has become a beloved tradition amongst the Sneaky’s team and gets everyone involved in the process. The tradition of Sauce Day extends beyond the walls of Sneaky’s Restaurant for owner Anthony Pilaia. Anthony has been making tomato sauce with his family for as long as he can remember, and knew he wanted to make the same rich, flavourful sauce for his restaurant. Making the sauce with his family has familiarised Anthony with the process, as well as taught him the importance of using fresh, quality ingredients in his cooking. "All tomato sauce should be homemade, just like the way Nonna would make it." Anthony Pilaia Quality is paramount to Anthony and subsequently to Sneaky's. It's important to him that he uses premium products in his dishes, and the Sneaky's Pomodori is no exception. From its ingredients to its taste, the sauce is all around incredible. It’s no wonder that this delicious sauce makes its way into so much of the Sneaky’s menu. It’s the star of the show in our ragu sauce, the base of most of our pizzas, and is also used to make our beloved Napoletana sauce, another Sneaky’s staple. The Pomodori is so widely used here that we make a whopping 10 tonnes of it each year! Our Sneaky's Pomodori features in our Spaghetti Ragu and Margherita Pizza. Head Chef Chloe Hale swears by our Sneaky's Pomodori, and tries to use it as much as possible in the menu. "It's just so traditional! It tastes like you're at Nonna's house, it's amazing." Chloe Hale It comes as no surprise then that our Napoletana sauce is also found everywhere on the menu! It's with our Arancini Balls and Italian Sausages, it's served with spaghetti in our Napoletana and Puttanesca pastas, and it's used in some of our specials too, like our Gnocchi Burrata and Spinach and Ricotta Cannelloni. Our Arancini Balls, Salsicce Italiane, and Gnocchi Burrata are all made with Sneaky's Napoletana sauce. Sneaky's Napoletana sauce is incredibly versatile and can be used in so many ways. It's a very easy sauce to make - a simple blend of extra virgin olive oil, onion, garlic, basil, salt, and of course, a jar of Sneaky's Pomodori. A Sneaky's Banquet is the perfect way to celebrate. Father’s Day at Sneaky’s is back! This year, give Dad the gift he really wants and treat him to a delicious, specially crafted Italian banquet at Sneaky’s Restaurant. We are spoiling Dad this year with some of our most beloved dishes, like our delicious house made arancini balls, classic margherita pizza, tasty chicken involtini, and even our mouthwatering rib eye. Keep reading to see our full banquet menu! Our Father's Day banquet menu. Shared food is very important to us at Sneaky’s Restaurant. It is an integral part of Italian culture that we love to see carried on in our restaurant, which is why we choose to celebrate special occasions like Mother’s Day and Father’s Day with banquets full of our favourite menu items! This year’s Father’s Day menu begins with our Salumi Board, a selection of cold cut meats, cheese, and a few added extras. Followed by one of our most popular menu items: our Arancini Balls. These delicious balls of rice are house made with four cheeses, then cooked until crispy, golden perfection. Then, to finish off the first portion of the banquet, we’ve got our house made Salsicce Italiane (Italian Sausages) in a traditional Napoletana sauce, served with continental bread. Our Salumi Board, Arancini Balls, and Italian Sausages. The fun continues with some Sneaky’s classics. Starting with two of our beloved wood oven pizzas, we’ve got the Margherita and the Prosciutto Pepi for Dad to feast on. Then we’ve included our creamy Gnocchi Funghi, made with local Swiss brown and porcini mushrooms, then drizzled with truffle oil and served in a light cream sauce. Fun fact: we actually make our own pizza sauce and gnocchi right here at Sneaky’s - only the best for Dad! Our Margherita Pizza, Prosicutto Pepi Pizza, and Gnocchi Funghi. Following the pizza and pasta is one of our most popular mains: the Involtini. Rolled chicken thigh with a bread herb filling, wrapped in prosciutto, then served with a chicken sauce reduction. And if that wasn’t enough, we’re also treating Dad to our mouthwatering Costata di Manzo! These rib eyes are cooked to perfection, then served with a delicious chimichurri. Finally, for dessert, we’re serving up our Vanilla Bean Panna Cotta with a berry coulis and a sweet polenta crumb. Now that’s what we call a banquet menu! Our Involtini, Costata di Manzo, and Vanilla Bean Panna Cotta. For our guests with dietary requirements, don’t worry, we haven’t forgotten you! We’ve put together a dedicated Vegetarian menu, including our delicious Eggplant Parmigiana, and a Vegan menu, with a choice from five different Vegan friendly mains. The kids love a day at Sneaky's! We think Dad deserves a drink this Father’s Day, so we’re treating him to one complimentary drink of his choice. All Dads dining with us will get to choose from our range of Virgara Wines, tap beer, bottled beer and cider, and base spirits, on us! Please note this list excludes high-end spirits, cocktails, shots, and Gran Reserve wines. We exclusively stock Virgara Wines on the Sneaky’s menu. The winery and vineyards are located just next door to us and are a proud local connection. Dad will get to choose from a delicious range of Virgara red, white, sparkling, and rosé wines. If Dad isn’t a drinker, no worries! Soft drink and water are included in the banquet at no additional cost, for everyone to enjoy! This Mother's Day, give mum the gift of a delicious Italian feast served at the renowned Sneaky's Restaurant. Opening it's doors in January 2014, Sneaky's began as a small restaurant serving the local community. Situated in the growing town of Angle Vale, the restaurant has also grown immensely over the last decade into a function centre, wedding venue, and go-to spot for large gatherings. Shared food is at the heart of our menu. The iconic 'Mother's Day Banquet' has been a staple on the Sneaky's event calendar for over 6 years now, and is always highly-anticipated by our regulars. This year, Chef Anthony Pilaia, has taken the menu to another level. 'Our Banquet menus are designed to be shared and enjoyed by the whole family, exactly the way that Nonna would cook. Lots of food, lots of flavour, and lots of love.' Anthony Pilaia Taking inspiration from Italian traditions, Sneaky's Restaurant has put a modern spin on Nonna's dining table with our 'Mother's Day Banquet'. The starting course sees the popular burrata ball paired with San Daniele prosciutto, tomato, and continental bread for a traditional starter. After that, you'll be delighted by our house made quattro formaggi Arancini Balls and South Australian Salt and Pepper Squid to round out the first course. Our tasty Burrata e Prosciutto, golden Arancini Balls, and crispy Salt and Pepper Squid. It wouldn't be an Italian feast without pizza and pasta, and that is exactly what our second course delivers! Featured on our banquet menu are two of our most popular pizzas: Margherita and Prosciutto Pepi. Our pizza dough is made fresh in house and ferments for at least 48 hours for that perfect base. Two of our famous Sneaky's pizzas: Margherita and Prosciutto Pepi. You'll also find another burst of flavour in our pizza sauce which is made from 100% tomatoes by our Sneaky's team during our annual sauce day. Our creamy Gnocchi Funghi made with local Swiss brown and porcini mushrooms. This brings us to our last course, showcasing our most popular main menu dishes: Chicken Involtini and Wagyu Scotch Fillet, a truly mouthwatering combination. Dessert also features our much beloved Vanilla Bean Panna Cotta served with berry coulis and sweet polenta crumb, ending the banquet feast on a sweet-note! Their wines are exclusively featured on the Sneaky's menu as a proud local connection. You can also find local gin producer 36 Short , who are located about 5 minutes away in Virginia, featured on our gin list and in our cocktail menu. Mum will be spoilt for choice! Our drinks menu boasts a proud range of 36 Short Spirits Gin and Virgara Wines. One of our annual Mother's Day traditions is hosting live music at our Outdoor Bar during our lunch session. Each Sunday, Sneaky's hosts a talented, local acoustic artist or duo to set the mood for our outdoor space, and Mother's Day is no exception.
